One of the most popular recipes from my Instagram! A satisfying alternative to a Lobster roll for those missing the flavours of the sea or simply curious to explore new plant-based options. Tender hearts of palm, blended with plant-based mayo, spices, and fresh herbs, nestled in a toasted bun. A must-try indeed!
Ingredients

1 can heart of palm, chopped

½ small red onion

1 stalks celery, chopped

1 cloves garlic, crushed
-
1 tsp purpose/old bay
-
½ tsp paprika
-
¼ tsp allspice
-
¼ scotch bonnet
-
½ tsp thyme leaves
-
½ tsp nori powder
-
1 tbsp + 1 tsp plant-based butter
-
1 tbsp capers
-
2-3 tbsp plant-based mayonnaise

1 tbsp lemon juice
-
½ tsp black pepper
-
1 tsp chives/dill
-
2-3 hotdog rolls
-
2 lettuce pieces to serve

1 plantain, sliced, fried for the side
Directions
Marinate the Heart of Palm: In a bowl, add the chopped heart of palm, seasonings, nori powder, garlic, scotch bonnet, and thyme leaves. Allow to marinate from 15 mins or up to 2 hours.
Cook the Heart of Palm: Melt 1 tbsp of plant-based butter in a frying pan. Then add 1 bay leaf and the marinated heart of palm. Allow to cook for 3-5 mins.
Prepare the Dressing: In a bowl, add the mayonnaise, celery, capers, 1 tbsp lemon juice, black pepper, and dill. Mix together until well combined. Add the cooked heart of palm and mix until well combined.
Prepare the Rolls: In a small bowl, add 1 tsp plant-based butter and maple syrup. Melt in the microwave for 15-30 seconds. Brush the rolls with the melted butter on each inside. Then fry the outside of the rolls for about 1 minute on each side.
Assemble the Rolls: Assemble the rolls by adding some lettuce and then the heart of palm filling. Top with dill or chives, and it is ready to serve!
